It's not exactly a fancy place, but...I've usually found that the best cafes aren't. Places that pour too much effort into presentation tend to take shortcuts on the food and drinks, and pre-prepared is never as good as food made at the restaurant.

But aren't those places more likely going to make everything from scratch? That's part of the ambiance, making something pretty that also tastes good. You would think that's going to get more customers in the door.
In most cases, the busier cafes don't have time to make everything from scratch. They'll get things in pre-prepared and heat them to order, or make them during slow periods and keep them warm for a while. That's why you see pots sitting behind the counter at big chains, they make entire batches of coffee with a percolator, and only a handful even offer pour over.
That's where they pour water over the coffee grounds, right?

That's right. I'm very particular about my coffee, and percolators sacrifice quality for speed. They heat the water to a much higher temperature, then force it quickly through the grounds. The result is a more acidic and bitter coffee that loses a lot of the individual character of the blend you're using.
